    Over Cook tagines

    A cooking tagine is a Moroccan cooking pot with a cone-shaped lid, in which meat and vegetables are slow-cooked. You can find handmade earthenware tagines and aluminum tagines for induction here, ranging from Ø 26 to 35 cm.

    Which tagine is right for you?

    • Earthenware: handmade Moroccan tagines such as the Slaoui (Ø 26, 30, 34, and 35 cm), the Oued Laou from Tetouan, and the family-sized tagine. An earthenware tagine is used on gas, preferably with a flame tamer, and in the oven; the Oued Laou can also be used on the barbecue.
    • Unglazed: unglazed terracotta, such as the Oued Laou (Ø 26 cm) and the tagine with handles (Ø 33 cm), is natural earthenware. You must season this type of tagine before cooking with it.
    • Induction: only a pan with a magnetic base works on induction. Choose a tagine with a non-stick coating, such as the Marrakesh, the Agadir, or the Saffron, a combination of aluminum and earthenware, or a Cuilina tagine.
    • Size: a small tagine of Ø 26 cm is sufficient for a small household. With Ø 30 cm you can cook for a family, and the Ø 35 cm tagines are intended for about 6 people.

    How to use an earthenware tagine

    You must first season a new earthenware tagine: soak it in water for a few hours, let it dry, rub the inside with olive oil, and heat it slowly in the oven. After that, cook on low to medium heat and use a flame tamer on gas. Avoid large temperature differences: do not place a hot tagine on a cold surface and do not pour cold water into it.
